Yeah, I need more jars!!!!! WooHoo! I made 21 jars of blackberry jam yesterday, and didn't have enough canning jars to preserve it all. No biggie.....the jars that won't seal will be put into the refrigerator, and eaten by my family. As you can tell from the assortment, I was pretty desperate toward the end. Ha! A jar of this stuff will certainly make a trip to Kentucky later.

Photo below - It's got a good color to it, and the sure-jel worked like a charm. As you can tell from the photo, I don't remove the seeds....that's just too much work.

Over the next several weeks, i'll be preserving all kinds of stuff. Pickles are next! Yay!!!

Have you ever made uncooked freezer jam? That's how I like to do a lot of mine.If I ever sell that AZ property and stay home year-round, I'll be buying another freezer and preserving more of my garden produce. I should buy a pressure canner for all these beans!
Thanks, Granny! I've never made freezer jam, just the regular way....Strangely enough, I have a brand new pressure canner, but the beans just aren't producing much yet. Oh....you know me, i'll ptreserve all kinds of stuff this year.
I am envious! Can you send some jam this way? :)

I was eating a yellow plum from the church tree today -- the same one we picked and jammed 10 gallons from last year -- and I realized that either I need to eat more toast, like six times a day, or make less jam. And it dawned on me -- I only want blackberry. Maybe Ollalieberry, but really, only blackberry. You're on the right path, apparently!
Your jam looks great EG. Nothing better then having homemade jam around. I always knew we had a bunch of raspberries in the property behind us but I thought they would never produce anything. Well after see all the berries behind your place I went and had a look and they are loaded with raspberries. I will keep my eye on them and maybe I can make up some backyard jam as well :-)

Those jars sure are pretty. Did you save any berries for blackberry pie? Yum. My dad's favorite is blackberry ice cream.
The seeds make it homey. I'm waiting on directions too. It will be nice to know how to do it right.

I just finished 35 pints of strawberry jam last week. Our blackberries arent ready yet but now you've made me hungry for them! The jars are beautiful.
Hehe, I can just see EG running to Wally World at midnight in his flip flops buying more jars to can the last of his jam that's setting up rapidly. I agree with you that removing the seed to make jelly is too much work, but my mother does it, so I let her, hehe.

Oh I love jam - your jars of it are beautiful! I can hardly wait for the raspberries/blackberries to come in. It's too early for that here but I'm making strawberry freezer jam tomorrow. Like Granny said, should try a batch of freezer jam - it's really easy to make and keeps the fresh taste of the fruit.
